麵包機篇 - 果醬 (BREAD MAKING – Jam)

之前也說過,小編時常利用麵包機做果醬,所以就先分享做果醬的方式吧。

As I mentioned in previous post, I always make jam using bread maker, so now, I will share in the followings :

麵包機做果醬與手工果醬不同,手工果醬其實煮成的時間比較快,但用麵包機卻可以一邊做,自己可以做其他事,2小時後就會通知你已經完成,所以小編比較喜歡用麵包機去做。 不過,用麵包機煮,小編有些心得可分享一下。

It’s quite different to make jam between using bread maker and handmade, it’s taking longer time using bread maker, but you can do other things while making jam, it will automatically stop after 2 hours. Therefore, I prefer to use bread maker and wanna share my experience about this.

買回來的生果清洗後,最好切得越小越好,不然很難煮溶的,就算好像藍莓這些細小的果,也要切成4小份啊。

After you washed the fruit, cut into pieces that as smaller as possible, make it easy to cook, for example, if you cook blueberry jam, the blueberries cut it into 4 small pieces.

煮果醬需要糖,你可以用冰糖或蔗糖,但小編有個方程式,基本上100%可以做到的。 首先,把所切好的果子上磅,看看幾重,把重量除以2.8,就可以得出需要的糖份,但要注意,這個糖份是以白糖份量計算,如用冰糖或蔗糖,就要減5-10g (甜度個人喜歡)。

i.e. 300g果子 : 300g/2.8 =107g白糖。

First, you need sugar, I prefer to use rock sugar or raw sugar, however, there’s a formula that until now still 100% work for me. After cut your fruit, scale it, then divided by 2.8, that’s you can calculated the sugar you need, however, this formula just use as granulated sugar, if you using rock sugar or raw sugar, better deduct 5-10g (depends of your favourite).

e.g. 300g fruit : 300g/2.8=107g (granulated sugar)

跟著就需要檸檬汁,小編會用現成裝檸檬汁,因為酸度高,做出來的果醬濃度比較穩定,最初小編都用新鮮榨檸汁,但尤於每個檸檬也不同,所以有時果膠不足,做出來好像水一樣。 檸檬汁也有方程式,就是把果子重量除以10.5就可以了。

i.e. 300g果子 : 300g/10.5=29g檸檬汁。

Afterwards, you also need lemon juice, for me, I’m using bottle one, because the acidity is higher, so the consistency of the jam is more constant; I have tried to use fresh lemon, however, it’s not enough acid to form the right consistency.  On the other hand, the lemon juice also have to calculate you need, the formula should be the weight of the fruit divided by 10.5.

e.g. 300g fruit : 300g/10.5=29g lemon juice.

最後把所有材料加入容器(記得轉果醬葉),2小時後就完成了。 當完成後,第一時間倒入已消毒的玻璃樽內,蓋好,待涼了就可以放入雪櫃。

Finally, add all ingredients into bread pan (don’t forget to change the kneading blend), it will then automatically finish after 2 hours.  Once it’s finished, put it immediately into a sealed jug, and put it into refrigerator when cold.

小編估讀者看了幾篇文章後會問,為什麼小編介紹的工具也是從外國訂回來而不在本港買呢? 老實說,小編所需要的工具很多香港也沒有的,就算香港有代理,價錢貴一倍以上,例如 : Bamix 手提攪拌器,香港代理索價為HK$3,3xx,還只得一個級數的型號, 英國網購只需HK$1,6xx,可況小編覺得不需要這麼強勁的級數,低一級也足夠有餘,HK$1,6xx連運費已包括一個另購配件了。試想想所有工具所慳到的,已足夠買所有小編介紹的製作食材吧。

When you read some of my previous articles, you will ask why need to order equipments from other counties instead of Hong Kong?  Frankly, most of the equipments that I required not available in Hong Kong market, eventhough there’s an agency in Hong Kong, but retail price will be as double as from original manufacturer, i.e. I found Bamix handheld blender in Hong Kong, they are selling HK$3,3xx and only available for one model, however, you can find there’s only HK$1,6xx in Amazon UK; Although I don’t need such a high-end model, I just bought one downgrade model with extra accessories that including shipping which costed me HK$1,6xx only.  Therefore, I rather save those money for food purchase instead.

如何網購呢? 小編主要也在不同國家的Amazon訂購,因為大多數是從生產商直接購買,比較安全,但要注意是,有些產品是不能直接運送到香港,那就要使用集運了。

How to purchase in other counties? For me, mostly bought from Amazon for different counties, because you can purchase it directly from manufacturer, it’s safety and cheaper, but be careful, some items may not ship to Hong Kong, so you have to use package consolidation company for assistance.

小編所介紹的產品,完全沒有利益的,真心只是純粹分享,小編時常也說,好的產品,不要覺得貴,只需投資一次,貴買平用,長遠是慳錢的;不是買平產品,壞了又再買,其實也是一樣;何況小編也幫讀者做了衝鋒部隊,買回來,試過了才介紹,不需讀者四處找,更不會胡亂浪費金錢。

The products that I introduced, without any conflict of interests, just wanna share as user experience.  On the other word, as my money saving concept,  rather buy a good product that a little bit higher price, but fully utlizied it instead buy a cheap one, easy to broken and buy a new one, for me, it’s wasting money and time to try. Honestly, I already be a tester for you, what I introduced to you that I bought and tested, you don’t have to find and test all around and waste your money.

基本製作篇 - 麵包 (BASIC MAKING - Bread)

小編所住的離島,大部份也是老店,老人家現在有不少已有生活穩定,所以他們開門做生意已是生活寄托而已,好像麵包店,一個月裏大概只開半個月,有時甚至只開一星期;之前小編開餐廳時,就不會理會它是否開門,因為會有定期供應;但自關閉後,除了超市,就可以說是沒有選擇,所以決定自己做了。

As most of the shops in my living area are operate by elder people for ages, they mostly now open shop not for money, just for daily soul, e.g. bakery shop here, they only open for half of the month or sometimes just a week out of the month.  However, I don’t care them when my beloved and I operate a café, because we have regular supply.  After we are closed, we only can buy from supermarket, therefore, finally decided to make our own at home.

由於只得倆口子及以健康飲食為目的,所以我們只會做簡單麵包加上自製果醬,有時也會手做一些簡單鄉村飽而已。

Since we only have 2 pax and aimed for healthy diet, so we only make simple bread with homemade jam, sometimes we will make sourdough bread instead.

首先,做麵包當然可以人手做的,但現在有不同品牌也有麵包機,為何不用呢? 此外,麵包機也可做其他食品,所以也是不錯的入手工具吧。

As you know, of course, we can make bread using our hand, but in modern world, there are so many bread maker, why not use so? Furthermore, other than making bread, a bread maker also have other functions as well, so bread maker is good choice for beginner.

好,這樣你會問小編,什麼牌子比較好呢? 我會介紹讀者買日本機吧。其實香港也有,為何要購買日本機呢? 因為日本版功能比香港版強很多啊,但有點麻煩是電壓不同,要是買回來,就一定要另購火牛轉換香港制式才可以用。 但小編計算過,買日本版連運費及火牛也比買香港版還便宜幾佰元,那為什麼要在香港買貴版又少很多功能的機呢,對不?

小編時常用麵包機做果醬及做其他麵糰,方便又快捷。 之後的文章也會逐一細說。 但不要問我如何做腸仔包,菠蘿包等等,老實說,小編不會做,加上做這些包一做就份量也不少,倆口子真的吃不到這麼多,而這些包其實很不健康,少食為妙吧。

I always use bread maker for making jam and dough, it’s so convenient and faster a lot,  I will share in the later posts. Don’t ask me for share how to do Chinese kind of sausage roll or pineapple bun, honestly, I don’t know how to do it and it’s quite large quantity for doing so.  On the other hand, it’s also not such a healthy food, better not always eat it.

基本製作篇 - 自製香料 (BASIC MAKING – homemade seasoning)

讀者見到標題可能會問,小編不是說過買回來嗎? 是的,大部份也要買回來,但有小數可以自製的,此外,小編分享這些可自製的香料將會時常用於日後所做的食品上,這樣成本也低很多。

As the title above, you will ask why not buy instead of homemade, it’s more convenient to do so.  Yes, most of the seasoning really need to buy from supermarket, but there are some can make it ourselves with lower cost and require to use a lot in the later stage.

說實話,小編及愛人是低收入人仕,所以在製做食品的工具上,會以物盡其用、貴買平用的心態,長遠來說是慳錢的方法。而小編每次買工具時,一定做很多資料蒐集才會買回來。

To be honest, I and my beloved are the lowest income level, therefore, we will try to fully utilized any equipments when we bought it, it is what we invest it as a long term saving money concept.  Furthermore, we will find as much as information we can before buy any equipments.

先說回今次的主題,如何自製香料呢? 其實很簡單,小編之前說過種植香草,但種植是有季節的,當香草適合的季節時,生長速度是很快的,所以我們要收割它,然後風乾,這樣可以把香草儲存。

OK, return back to topics, How to make our own seasoning? Actually, it’s very simple, as I mentioned in previous post, we are growing herbs at home, however, when those herbs in the right season, it will then growing so fast, we just harvest and dehydrated it, store it for later use.

那麼如何風乾呢? 當然我們需要一部風乾機吧。首先,如何選擇風乾機?市面上有平有貴的,有大又有細的,先簡短地解釋一下吧。現時市場上有兩款比較受歡迎的風乾機,一款是美國老品牌,款式較笨重,但設計比較好,拉屜式,風扇在後方,所以風乾平均,小型的沒有時間掣,大型才有,而價錢很貴。 另一款近年在家用很流行,因為體積細,最多可疊高至10層,價錢平很多,所以很受一般家庭使用,可是這些家用風乾機是塑料製做,加上風扇在最下方,如果一次風乾太多食物,要用多好倍時間才可完成。

How to make dehydration food? Of course, you need to buy a dehydrator.  First of all, how to select a dehydrator in the market? There are 2 types of popular dehydrators in the market, One is made in USA, it’s the famous and old brand dehydrator, it’s so bulky, but design is good, front door with drawer layers, the fan at the back, so the circulation is better, but it’s expensive; another one, which is more suitable for home use, it’s made of plastic, small, can be stand up to 10 layers and cheaper price, however, the fan is sitted in the bottom of the machine, so you are required to double or triple it’s time when dehydrating.

所以,以上兩款小編也覺得各有問題,幸好找到一款今年最新在韓國製造的風乾機,不僅外型好看,內涵也很好,價錢比美國品牌便宜些,現時只有它才有的工業式風亁機的紅外線功能,這個紅外線功能是用來冒彷日照的效果,那麼可以用來曬海鮮也可以。小編也試過曬魷魚,幾小時就完成了。

On the other word, as my point of view, I still not really satisfied for the above machines.  Luckily, after many of researches, finally, I found one that made in Korea this year with red-dot award, it’s not just stylish, also have good function on it, but the price is more affordable.  This is the first machine with built in infrared function which only available in commercial use nowadays.  The infrared used as solar/sunlight function, so you can use it to dehydrating Chinese salty food as well.  I tried to dehydrated squid, it’s only took me few hours to finish it.

基本篇 - 材料必需品 (BASIC – basic necessities)

古語有雲,開門七件事 - 柴米油鹽醬醋茶,這些是廚房必需品。 在古時沒有商業化,人們沒有所用的大多也比較天然的材料;但現代的社會,這些必需品經過商業化後,選擇已多不星數,在選講時真的要小心一點,小編會在這裏簡單地逐一解釋油、鹽及糖的知識。

In old century, people always said the most essential open seven things (daily needs of the household) : firewood, rice, oil, salt, soy sauce, vinegar, and tea. However, people almost got the most natural materials at that time. Although, in todays world, you can have various choices of these items, unfortunately, some are refined, therefore, I hereby, will explain in a simple way of oil, salt and sugar.

油 (Oil)
其實在超市走一轉也發現,食用油真的很多,有花生油、芥花籽油、橄欖油、栗米油、葵花籽油等等等等,但小編只用初榨橄欖油,當然,如果讀者有錢的話,可以選擇椰子油,這兩款油也是比較健康的。
為什麼不用其他油? 老實話,大部份也是配方油,不是真正的提取油,加上那些花生油,葵花籽油在高溫下會釋放有害物質。

Supermarkets in Hong Kong, you can find so so many types of oil : peanut oil, Canola oil, corn oil,olive oil, etc.. But for me, I’m just only use extra virgin olive oil, this is the most healthier choice. Of course, if you can afford, coconut oil is the best choice.
But why not choose other type of oil? Most of time are just a formula oil, not really taken from real and some oil will release toxic material when heating.

鹽 (Salt)
市面上的鹽一般有粗鹽、餐桌鹽、海鹽。 一般來說,海鹽比其他鹽為健康,因為直接從海水抽取蒸發出來的,而粗鹽及餐桌鹽則經過精製過的。

You can commonly find Kosher salt, table salt and sea salt. Generally, sea salt is the most healthiest salt, it is directly separate and evaporate from sea. However, kosher salt and table salt are refined salt.

糖 (Sugar)
最常見的種類有白糖、黃糖、片糖、冰糖、蔗糖和黑糖,所有糖也是從甘蔗提取出來的。但白糖及黄糖則精製過,沒有了甘蔗本身的營養,只保留甜味,而黃糖是從白糖裏加入糖蜜,所以才有淡啡色。片糖及冰糖也是精製糖,但原裝蔗糖及黑糖則是最天然、最健康的,它保留了甘蔗的礦物質及營養,所以小編會用蔗糖來作煮食用,而黑糖卻用於製造麵包。

There are few types of sugar you can find in the market : granulated sugar, brown sugar, slice sugar, rock sugar, raw sugar and black sugar, all type of sugars are taken from cane. However, granulated sugar and brown sugar are refined sugar, no more nutrition but sweetness and brown sugar is using granulated sugar added with molasses. Slicer sugar and rock sugar are refined combined sugar. Thus, the most natural and healthiest sugar is raw sugar and black sugar, they most remain the most nutrition value of the cane. I usually use raw sugar for cooking and curing and black sugar for making bread.
