自製醃肉及煙燻篇- 風乾鴨胸火腿 (HOMEMADE CURING AND SMOKING – Duck Breast Proscuitto)

在香港,小編估計比較少人聽過或食過,因為很少食店會供應,而超市也沒有這食品,但在外國卻很常見,甚至是街頭小食也有。
I think there are very few people heard or even tried duck breast proscuitto in Hong Kong, also very few restaurant will provide this food, and can’t find it provided in supermarket as well, however, this food is so common in foreign counties and you can find it in food truck too.

 

風乾鴨胸火腿是風乾肉類中最容易及最快可以食用的,醃製需時1-2天,而風乾只需2-3星期就可以了。
Duck breast proscuitto is the most easy and the most shorten time to do compared to other type of proscuitto, it only takes 1-2 days for curing and air-dried around 2-3 weeks.

 

 

做法 :

 

1. 洗淨鴨胸及印乾
Wash it well and dry it using paper towel

 

2. 在枱上鋪好一張保鮮紙,先將鹽及黑胡椒灑在保鮮紙上,放上鴨胸,再在鴨胸上灑滿鹽及黑胡椒至整件鴨胸給鹽及黑胡椒包住
Place a plastic wrap in the table, put some salt and black pepper in the plastic wrap and place the duck breast in, and put more salt and black pepper to cover the whole duck breast

 

3. 小心地用保鮮紙包實所有東西,就可以放入雪櫃醃製
Carefully wrap well the plastic warp all over the duck breast and put into the refrigerator

 

4. 1-2天後把醃好的鴨胸取出,在水清洗後,印乾,就可以進行風乾
Take it out from refrigerator after 1-2 days and wash it under water tape, dry it using paper towel and hang it out for air drying

 

5. 大約2星期就可以切成薄片,用來做送酒佐口小食係一個不錯的配合
After dried for 2 weeks, you can cut it into think slice and good to eat with wine.

 

Tips : 如果讀者怕鴨肉的羶味,可以配藍芝士一起食用,藍芝士不僅帶走鴨羶味,還給你口腔爆發不同的味道。
 If you don't really like the duck taste, you can try to eat with blue cheese, it can give you a complex taste within your mouth.

[原創食譜 Original Recipe] 自製小食篇 - 薯片 (HOMEMADE SNACK – Potato Chips)

這是突然的插入文章,暫且把做煙肉製作放低一下,因為最近試做了工廠式的薯片,本來想遲些才寫關於做小食的文章,但今次完成後在一些討論區上發放了相片,卻吸引了不少回響,答應整理後分享給大家。

This is an extra post that I’m not support to write it now, recently I tried to make homemade potato chips that really like factory one, and uploaded in facebook group, however, so many feedbacks hope that to write a recipe for this, thus, just put aside the post of bacon making, and today, just organised photos and share it out.

 

老實說,薯片製作程序真的比較麻煩,但為健康著想也是值得的。工廠式薯片加了很多調味劑、防腐劑、人做色素等等,鹽份又高,最重要係用千年油炸出來的食物,致癌物極高。

Actually, it’s so many steps for doing it, but it is healthy and worth to doing so.  Not like the package one, factory must added large amount of salt, flavourings, colourings, preservations etc, and the main point is they are using recycle oil, it is really harmful for our health.

 

先說薯仔,最好不要在超市買袋裝的焗薯,焗薯適合用來做餸菜及沙律,但不適合用來油炸;我們需要用新薯或稱為白薯來做,因為比較硬身及不易變黑。

First, we have to buy white potato, it’s more hard and not easy to turn black, don’t buy the package one from supermarket, that is russet potato, which is good for cooking and making salad, but not good for frying.

 

做法 :

 

1. 首先,把薯仔去皮,清洗乾淨,用食物處理器把薯仔切成2分厚
First, peel the skin, wash it well and use food processor for cut it in slices for 2mm thickness

2. 準備一個鍋,加入清水煲滾,當水滾後加入白醋,水與白醋的比例是2:1,然後把新鮮薯片放入,煲15分鐘。這個步驟用來去除薯仔內的澱粉質
Prepare a pot, boil water, add white vinegar when water boiled, water and white vinegar the ratio is 2:1, then put the potato slices and boil it for 15 minutes, this steps is used to wash out the potato starch

3. 準備一個篩及大碗,把篩放在大碗內,煲好後把薯片倒在篩內,先在水喉下沖洗一會,待薯片涼一點後,用清水浸著薯片並手清洗多餘的澱粉質,這個步驟需要反覆清洗及更換清水,直至看到水能清晰見底就可以了。
Then, prepare a sieve with a large bowl, put the sieve into the bowl, when the potato boiled, then use tape water to cool down a bit, then use your hand to wash out the remaining starch, repeat wash and replace water steps until water is clear.

4. 跟著用紙或布印乾水份,放上風乾機,風乾至硬身。小編的風乾機用了日照晒乾模式,70度,3小時就完成了。但讀者沒有用這個風乾機,請參考您所用的風乾機手冊。
After washed, use paper or towel to dry out some water, then use dehydrator to dehydrate it until becomes hard.  Since my dehydrator is the newest model, I can select sun-dried mode for 70 degrees for 3 hours only.  So please follow your dehydrator manual if you are not using this model.

5. 風乾後可以存放很久,要吃的時候先放入熱水浸15分鐘或煲至軟身,印乾,加入油及你喜歡的調味撈勻,放入氣炸鍋,160度,10分鐘,然後再180度,3分鐘就可以享用了。
After dehydrated, you can keep in a jar for long time, when you wanna eat, just put the potato slice into a hot water for 15 minutes or boil it for a while, then mix some oil and your favourite seasonings, put into airfryer for 160degrees, 10 minutes, enjoy!

麵包機篇 - 小食 (BREAD MACHINE MAKING – snack)

之前也提過,麵包機可以做麵包和果醬外,也可以做些小食,例如 : 麻糬、肉絲/肉鬆和蛋糕等。 但小編不喜歡吃麻糬,蛋糕比較喜歡用水波爐,但小編就試過做肉絲/肉鬆,真的很好吃,有些人會用煲湯後的豬肉,但由於煲湯後,豬肉本身有味道,小編覺得怪怪的,建議買冰鮮肉做,味道比較好。

As mentioned before, other than bread and jam, bread machine also can make other snack, i.e. rice cake, simple cake or meat floss, etc. Since I don’t like rice cake and prefer to make real cake by waterwave oven, so I just tried to make meat floss before, it’s really yummy; some people use some meat that used for cook soup, but I prefer to use fresh meat to do so because there’s will have other flavor inside the meat.

做法很簡單,先用手把肉撕開,如喜歡吃肉絲的話,就不要撕得太爛,但做豬鬆就要做得仔細些吧;跟著做一個汁料,一般也是生抽、老抽、胡椒粉、紹興酒、五香粉,最後把豬肉及汁料放入容器,選擇麻糬模式 (記得轉果醬葉)就可以了,就是這樣簡單。

It’s so simple way to do meat floss : just tear the meat into small pieces, if you like chewy texture, just tear it roughly, otherwise make it as small as possible. Next, make the sauce, normally, just use soy sauce, dark soy sauce, white pepper powder, shaoxing rice wine and chinese spices powder, put the meat and sauce into bread pan (don’t forget to change jam blend), select rice cake mode, that’s it.

基本製作篇 - 麵包 (BASIC MAKING - Bread)

小編所住的離島,大部份也是老店,老人家現在有不少已有生活穩定,所以他們開門做生意已是生活寄托而已,好像麵包店,一個月裏大概只開半個月,有時甚至只開一星期;之前小編開餐廳時,就不會理會它是否開門,因為會有定期供應;但自關閉後,除了超市,就可以說是沒有選擇,所以決定自己做了。

As most of the shops in my living area are operate by elder people for ages, they mostly now open shop not for money, just for daily soul, e.g. bakery shop here, they only open for half of the month or sometimes just a week out of the month.  However, I don’t care them when my beloved and I operate a café, because we have regular supply.  After we are closed, we only can buy from supermarket, therefore, finally decided to make our own at home.

由於只得倆口子及以健康飲食為目的,所以我們只會做簡單麵包加上自製果醬,有時也會手做一些簡單鄉村飽而已。

Since we only have 2 pax and aimed for healthy diet, so we only make simple bread with homemade jam, sometimes we will make sourdough bread instead.

首先,做麵包當然可以人手做的,但現在有不同品牌也有麵包機,為何不用呢? 此外,麵包機也可做其他食品,所以也是不錯的入手工具吧。

As you know, of course, we can make bread using our hand, but in modern world, there are so many bread maker, why not use so? Furthermore, other than making bread, a bread maker also have other functions as well, so bread maker is good choice for beginner.

好,這樣你會問小編,什麼牌子比較好呢? 我會介紹讀者買日本機吧。其實香港也有,為何要購買日本機呢? 因為日本版功能比香港版強很多啊,但有點麻煩是電壓不同,要是買回來,就一定要另購火牛轉換香港制式才可以用。 但小編計算過,買日本版連運費及火牛也比買香港版還便宜幾佰元,那為什麼要在香港買貴版又少很多功能的機呢,對不?

Because Japan version is more functionality than Hong Kong version, but it’s cheaper a lot too. However, you have to caution about the voltage different-ship between Japan and Hong Kong, you have to add-on a voltage converter.  Although it’s trouble for doing so, but the total sum are much cheaper than Hong Kong version with more functions.

小編時常用麵包機做果醬及做其他麵糰,方便又快捷。 之後的文章也會逐一細說。 但不要問我如何做腸仔包,菠蘿包等等,老實說,小編不會做,加上做這些包一做就份量也不少,倆口子真的吃不到這麼多,而這些包其實很不健康,少食為妙吧。

I always use bread maker for making jam and dough, it’s so convenient and faster a lot,  I will share in the later posts. Don’t ask me for share how to do Chinese kind of sausage roll or pineapple bun, honestly, I don’t know how to do it and it’s quite large quantity for doing so.  On the other hand, it’s also not such a healthy food, better not always eat it.
